Confections
If there is one naturally sweet thing that I love the most, it would have to be honey. So versitile and diverse, and with the ability to take up the very flavors of the nectar it was produced from, there can be thousands of different varieties. In my quest to somehow involve honey into my chocolates, I have begun production of several different varieties of nougat, which is a classical confection made of whipped egg whites, and heated honey. Similar to the nougat of say a Three Musketeers, but without all of the artificial flavors.

I have included a new section of caramels that will showcase new and unique infusions that only could come up with (did someone say bacon caramels?).
